kala jamun recipe

Hi everyone ,

Ingredients
for khoya / kova / mawa:
  • 1 tbsp ghee / clarified butter
  • ½ cup milk
  • ¼ cup thickened cream ( optional )
  • 1 cup milk powder
for sugar syrup:
  • 1 cup sugar
  • 1 cup water
  • 3 cardamom, powdered
  • 1 tbsp lemon juice
for kala jamun:
  • ½ cup paneer, crumbled
  • 1 cup khoya / kova / mawa
  • ¼ cup maida / plain flour / all-purpose flour
  • pinch baking soda
  • 1-2 tbsp water / milk, as required
  • oil for deep frying
for stuffing:
  • 2 tbsp almonds, chopped
  • 2 tbsp cashews, chopped
  • 1 tbsp saffron water
  • pinch red food colour (optional)
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl take crumbled paneer.
  2. mash the paneer till it forms a smooth dough.
  3. mash till the paneer forms a smooth dough without any paneer particles.
  4. now add prepared khoya and mash well.
  5. furthermore, add maida and combine with paneer khoya mixture.
  6. add a pinch of baking soda and water or milk if required to get moisture.
  7. mix gently to form a smooth dough.
  8. also prepare stuffing by mixing dry fruits and saffron water, colour with prepared dough. make balls.
  9. firstly, take a small ball sized dough and make ball.
  10. and place the prepared dry fruit ball in centre.
  11. cover and seal the ball.
  12. heat the ghee on low flame and when the ghee is moderately hot, fry the jamuns.
  13. fry till the balls turns black.
  14. immediately, drop the hot kala jamuns into hot sugar syrup.
  15. cover the lid and rest for 2 hours.
  16. finally, serve kala jamuns when doubled in size.

spicy shakarpara recipe

Ingredients
  • 1 cup maida / all-purpose flour / plain flour
  • 1 tbsp semolina / bombay rava / sooji
  • ¾ tsp chilli powder, add as per your spice level
  • 1 tsp cumin seeds / jeera
  • ¾ tsp sugar
  • salt to taste
  • 2 tbsp ghee / oil, hot
  • water as required, to knead dough
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. in a large mixing bowl take 1 cup maida.
  2. to that add 1 tbsp rava, chilli powder, jeera, sugar and salt to taste.
  3. mix all the dry ingredients well.
  4. now pour hot ghee / oil over the flour. this helps to make shankarpali crispy.
  5. crumble the ghee with dough well. rub with your hands. be careful as the ghee will be very hot.
  6. now add water slowly and start to knead the dough.
  7. knead the dough 5 minutes or till form stiff and tight dough.
  8. cover with moist cloth and rest for 20-30 minutes.
  9. knead again and pinch a large ball. flatten them as you do with chapathi ball.
  10. now grease the rolling base and rolling pin, roll them into round / square shape making slightly thick than chapathi.
  11. take a knife / pizza cutter and cut them into diamond or square shapes.
  12. drop the shankarpali into hot oil.
  13. flip over so that it cooks on both sides.
  14. fry them to nice golden brown on low-medium flame.
  15. drain them on kitchen towel to remove excess oil.
  16. allow them to cool to room temperature and store them into an airtight container.

Ingredients
to soak methi leaves:
  • 1 bunch methi leaves / fenugreek leaves, washed and finely chopped
  • ¾ tsp salt
  • 1 cup water
for methi malai paneer:
  • 3 tbsp oil
  • 1 tsp cumin seeds / jeera
  • 1 bay leaf / indian tej patta
  • 4 cloves / lavang
  • 2 pods cardamom / elachi
  • 1 inch cinnamon stick / dalchini
  • 1 tbsp ginger-garlic paste
  • ½ tsp kashmiri red chili powder / lal mirch powder
  • 1 green chili, slit length wise
  • 1 tsp coriander powder / dhaniya powder
  • ¼ tsp turmeric / haldi
  • 1 cup tomato pulp / puree of 2 large tomatoes
  • 1 tsp sugar
  • ¾ cup milk
  • salt to taste
  • ¼ cup malai / fresh cream
  • ¼ cup water, add as required
  • 11 cubes paneer / cottage cheese
  • ¼ tsp garam masala powder

Instructions ( 1 cup =255 ml)
  1. firstly heat oil and add cumin seed, bay leaf, cloves, cardamom and cinnamon stick. saute.
  2. additionally, add ginger garlic paste, green chili and onions. saute.
  3. now add spice powder like chili powder, turmeric and coriander powder. saute.
  4. also add tomato pulp and saute till it thickens.
  5. also saute till the masala start to release oil.
  6. now add sauted methi leaves.
  7. additionally add sugar and salt.
  8. saute for a minute.
  9. now add milk, cream and water.
  10. also add paneer cubes and give a gentle mix.
  11. additionally add garam masala.
  12. cover and simmer for 2 minutes.
  13. finally, serve methi malai paneer with chapathi or paratha.

pasta recipe in white sauce

for white sauce:
  • 1 tbsp butter
  • 2 cloves garlic, finely chopped
  • 1 tbsp maida / plain flour / all-purpose flour
  • 1 cup milk
  • ¼ tsp pepper, crushed
  • ¼ tsp red chilli flakes
  • salt to taste
for boiling pasta:
  • 1 cup penne pasta / any pasta of your choice
  • 5 cups water or as required to boil
  • salt to taste
for pasta:
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • ½ green capsicum, finely chopped
  • ½ red capsicum, finely chopped
  • 10 florets broccoli
  • 3 tbsp water, or as required
  • ¼ tsp pepper, crushed
  • salt to taste
  • few basil leaves, chopped
  • ¼ tsp red chilli flakes
  • 3 tbsp parmesan cheese, grated
Instructions ( 1 cup =255 ml)
white sauce for pasta recipe:
  1. firstly, in a large vessel add butter and saute garlic.
  2. also saute maida.
  3. furthermore, add milk in 3 batches and whisk 2-3 times.
  4. continue to whisk till a thick paste is formed.
  5. further, add pepper, red chilli flakes and salt.
  6. mix well and get the sauce to a boil. keep aside.
cooking pasta recipe:
  1. firstly, in a large vessel add water, pasta and salt.
  2. cook the pasta for 10-12 minutes.
  3. finally drain the pasta and keep aside.
white sauce pasta recipe:
  1. firstly, in a large pan heat butter and saute onions.
  2. also saute vegetables.
  3. then add prepared white sauce and saute well.
  4. also add little water.
  5. further, add boiled pasta.
  6. then season with salt and pepper.
  7. give a good mix and add basil leaves, chilli flakes.
  8. further mix and transfer to a serving bowl.
  9. finally grate parmesan cheese and serve.
