Ingredients
- 1 cup maida / all-purpose flour / plain flour
- 1 tbsp semolina / bombay rava / sooji
- ¾ tsp chilli powder, add as per your spice level
- 1 tsp cumin seeds / jeera
- ¾ tsp sugar
- salt to taste
- 2 tbsp ghee / oil, hot
- water as required, to knead dough
- oil for deep frying
Instructions ( 1 cup =255 ml)
- in a large mixing bowl take 1 cup maida.
- to that add 1 tbsp rava, chilli powder, jeera, sugar and salt to taste.
- mix all the dry ingredients well.
- now pour hot ghee / oil over the flour. this helps to make shankarpali crispy.
- crumble the ghee with dough well. rub with your hands. be careful as the ghee will be very hot.
- now add water slowly and start to knead the dough.
- knead the dough 5 minutes or till form stiff and tight dough.
- cover with moist cloth and rest for 20-30 minutes.
- knead again and pinch a large ball. flatten them as you do with chapathi ball.
- now grease the rolling base and rolling pin, roll them into round / square shape making slightly thick than chapathi.
- take a knife / pizza cutter and cut them into diamond or square shapes.
- drop the shankarpali into hot oil.
- flip over so that it cooks on both sides.
- fry them to nice golden brown on low-medium flame.
- drain them on kitchen towel to remove excess oil.
- allow them to cool to room temperature and store them into an airtight container.
