Ingredients
to prepare tomato puree:
- 3 tomatoes - ripped, chopped
- 1 tbsp butter
- 1 tej patta / bay leaf
- ½ cup water (add more if required)
- salt to taste
to prepare soup:
- 1 tbsp butter
- 1 tbsp maida / all purpose flour
- 2-1 tbsp sugar (add to your taste and depends on quality of tomatoes)
- 1 tbsp black pepper, crushed
- 5 tbsp fresh cream
- 1 slice bread, for croutons
Instructions
preparing croutons:
- toast the bread with butter
- cut to square pieces discarding the edges.
preparing tomato puree:
- add 1 tbsp of butter and saute bay leaf for few seconds.
- next add chopped tomatoes to the butter and saute for a minute
- also add approximately ½ cup of water and cook tomatoes well.
- add in some salt and cook for about 15 minutes on medium flame.
- cool down completely and remove the bay leaf before you blend.
- blend the cooked tomatoes to smooth puree.
- strain the puree using a strainer. discard the seeds and skin of tomatoes.
- make sure your your tomato puree is pure and smooth.
preparing soup:
- add 1 tbsp of maida and fry for a minute. the raw smell of maida has to to disappear.
- add the filtered tomato puree and give a good mix. get to a boil.
- now add required amount of sugar and mix well.
- now add crushed black pepper and give a quick mix.
- lastly add some fresh cooking cream. mix and get to a boil
- serve tomato soup hot with some fresh cream on top along with croutons.
