panchmel dal recipe

Ingredients
dal's used :
  • moong dal - 2 tbsp
  • masoor dal - 2 tbsp
  • toor dal - 2 tbsp
  • chana dal - 2 tbsp
  • black urad dal - 2 tbsp
for masala:
  • 1 medium sized onion, finely chopped
  • 1 medium sized tomato, finely chopped
  • 2-3 dry red chilies
  • 10-12 curry leaves / kadi patta
  • 2 tsp ginger - garlic paste
  • ½ tsp black mustard seeds/rai
  • 1 tsp cumin seeds / jeera
  • 1 to 2 pinches of asafoetida powder / hing (optional)
  • ½ tsp turmeric powder / haldi
  • ½ - 1 tsp red chili powder / lal mirch powder
  • 1 tsp coriander powder (optional)
  • 1 tsp kasuri methi / dry fenugreek leaves
  • ½ tsp garam masala powder
  • 2-3 tbsp oil or ghee or unsalted butter
  • 1 or 2 tbsp chopped coriander leaves / dhania patta
  • salt as required
Instructions
  1. combine all the 5 dals in equal proportion and soak in water for 30-45 mins.
  2. pressure cook the dals adding 3 cups of water for 4-5 whistles.
  3. in a pan heat ghee and add the mustard, cumin and fry them. let them splutter.
  4. add the onions and fry till they become transparent or light brown.
  5. now add ginger - garlic paste and fry until the raw smell disappears.
  6. add red chillies, curry leaves and stir.
  7. now it is time to add the tomatoes. cook till they soften and you see oil releasing from the sides.
  8. add all the spice powders - turmeric powder, red chili powder, coriander powder. and fry for a minute.
  9. now add the cooked and mashed dal. stir well.
  10. add water and salt to taste.
  11. continue to stir and cook the the dal for 4-5 minutes in a low to medium flame.
  12. finally, add the crushed kasoori methi and garam masala.
  13. add chopped coriander leaves.
  14. your panchamel dal is ready. serve with choice of rotis or rice recipes.
