potato patties burger recipe

Ingredients
for veg patties / potato patties / aloo tikki:
  • 1 tsp oil
  • ¾ tsp jeera / cumin seeds
  • ½ onion, finely chopped
  • 1 garlic clove, finely chopped
  • ¼ cup peas, fresh / frozen
  • 3 potatoes, boiled and pealed
  • 1 tsp kashmiri chilli powder, adjust according to your spice level
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • salt to taste
  • ¼ cup thick poha / beaten rice / avalakki, washed
  • ½ cup bread crumbs
  • oil for frying
for corn flour - maida paste:
  • 1 tbsp corn flour
  • 2 tbsp maida / plain flour / all-purpose flour
  • ¼ cup water
for burger sauce / mayo-tomato sauce:
  • 2 tbsp eggless mayonnaise sauce
  • 2 tbsp tomato sauce
for burger assembling:
  • 3 large burger bun
  • few fresh lettuce leaves
  • 6 thick tomato slices
  • few onion pieces
  • 3 cheese slices
  • 3 burger skewers / stick
Instructions
corn-flour maida paste recipe:
  1. mix maida and corn flour in a wide bowl.
  2. add required water and make a smooth paste. keep aside
burger sauce / mayo-tomato sauce recipe:
  1. in a small bowl add mayonnaise sauce and tomato sauce.
  2. give a good mix. keep aside
veg patties / potato patties / aloo tikki recipe:
  1. in a large kadai add a tsp of oil along with cumin seeds. allow them to splutter.
  2. now add chopped onions and saute for a minute.
  3. add finely chopped garlic and continue to saute till the raw smell disappears.
  4. add some peas and fry till the peas are cooked well.
  5. now mash the boiled potatoes with your hand. mix well with peas.
  6. time to add spices. add chilli powder, turmeric powder, coriander powder and salt.
  7. mix well and mash using a potato masher. make sure there are no chunks of potatoes left out.
  8. add some washed poha so that it absorbs extra moisture present in the aloo.
  9. combine everything well. and allow the mixture to cool completely before you make patties.
  10. now take a handful of mixture and give a nice round shape. slightly press uniformly to make patties. adjust the size according to the size of burger bun.
  11. dip each patty in corn-flour maida paste. cover on both the sides.
  12. then coat the patty in breadcrumbs. alternatively, you can also use semolina / rava.
  13. heat oil for shallow frying. meanwhile, dust the excess bread crumbs. place them carefully in the medium hot oil.
  14. when one side is golden, flip and fry the other side. drain the patty on kitchen paper towels to remove excess oil.
assembling aloo tikki burger recipe:
  1. take a large burger bun and cut them half horizontally.
  2. now keep both the halves separately and apply the burger sauce (mayo-tomato sauce) on top part of bun.
  3. place a lettuce over it and press.
  4. now keep 2 thick tomato slices.
  5. also place few onion pieces.
  6. on the other half of burger bun (bottom part bun) place the prepared aloo tikki patty.
  7. apply burger sauce (mayo-tomato sauce) generously.
  8. place the cheese slice over the patty.
  9. and now carefully flip the bottom burger piece over top burger piece. this is important else your layered stuffs will drop off if you do reverse.
  10. now do upside down. take the burger skewers / stick and insert into the centre of burger. this helps everything to hold properly.
  11. serve aloo tikki burger with some french fries and tomato sauce.
